Chocolate Raspberry Ice Cream Recipe

Of course you'll need to have an Ice Cream Maker for this recipe.

1 Cup frozen raspberries (fresh is always fine as well)
1/2 Cup regular white sugar
5 oz semi-sweet chocolate chopped up a bit
4 egg yolks
1 cup half & half  (10%) cream
1/3 cup regular sugar to be used with the chocolate
1 1/2 cups 35% whipping cream


1. In a double boiler (one bowl on top of another bowl that has boiling water in it) combine raspberries and 1/2 cup sugar.
Cook for ten minutes until fruit is soft then put in a food processor to puree the mixture then chill

2. In the same double boiler (cleaned) reduce heat to medium, melt chocolate and put aside. In another bowl over the double boiler beat egg yolks, half and half, and 1/3 cup sugar for 5 minutes until about doubled in volume; beat in the chocolate and let cool in fridge.

3. Stir in whipping cream. Freeze in your ice cream maker; when half frozen mix in the raspberries then continue to freeze.
